SO, I am attending a pal's potluck Fur-B-Q in a couple days to celebrate goodtimes, the sunny weather, and go swimming! Had this barbeque sauce idea for about 2 months and needed to put it to use!
Its smelling so, so, SO good. Im gonna make some beef ribs to go with it (maybe some pork too :D ).

Yields roughly 1/2 Gal or 64oz
Small sauce pot:
<reduce on med/low until sharp alcohol smell is gone>
4oz Whiskey (used JD's)
6oz Brandied Apple Cider (@12%)
12oz Med/light-bodied ale or lager (used Anchor Steam)
Large sauce pot:
<render on low>
12oz Pkg of very fatty bacon (fat is flavor! slab bacon preferable)
<add when 75% of fat has melted off>
3ea Yellow onion, sm . dice
<brown onions lightly>
<pour small sauce pot's contents into large sauce pot's>
Add remaining ingredients to large sauce pot:
2T Chili powder
1ft Fresh oregano stem (roughly 2.5T, chopped)
16oz Catsup
24oz Tomato sauce
6oz Molasses
8ea Chipotle pods, dried and stems cut off (canned in adobo sauce is BAD BAD BAD!)
6oz Cider Vinegar
5oz Yellow mustard
4ea Garlic cloves, peeled
1c Sugar, granulated.
1c Water (slack to protect against over reducing and maintaining a good body/texture)
<Bring to simmer and cover. Cook on lowest possible heat for 2-3 hours.>
Puree sauce in blender (be sure to fill blender only 3/4 MAX. hot liquids expand alot when pureeing. I've seen nasty burns working in the industry because of this!)
Season with Salt, Pepper, Vinegar, and Sugar as needed.
Chill and/or enjoy! :3
